What are Black Eye Beans?
Black Eye Beans, otherwise known as Cowpeas, are a common ingredient used in various recipes including chillies, salads, stir-fries & curries. They have also become a popular source of protein for vegans and vegetarians. Black Eye Beans are high in polyphenols, a form of antioxidant. Antioxidants can help fight free radicals and play a role in protecting DNA, proteins and lipids from oxidative stress.
Sourced from the plant Vigna Unguiculata, these legumes have a cream background with black colour around the centre which gives it its name. They are medium sized, oval shaped beans that are firm in texture and have a typical bean flavour.
