Gluten Free Pancake Recipe:

Ingredients: 150g Cream of Rice (White Rice Flour), ½ teaspoon salt, 1½ teaspoons baking powder, 2 tablespoons granulated sugar, 165ml milk, 1 large egg, ½ teaspoon vanilla extract & 2 tablespoons melted butter or oil.

Method: Whisk together the Cream of Rice, salt, baking powder & sugar. Add the butter, egg, milk & vanilla extract. Rest for 5 minutes. Heat a non-stick frying pan over medium-high heat. Grease with butter and add preferred amount of batter. Cook for 2 minutes or until golden brown and then flip. Repeat with remaining batter and serve.
