Sulforaphane is a natural sulphur-rich compound found in vegetables such as cauliflower, cabbage, bok choy, kale & broccoli. It is believed to aid in antioxidant responses, antioxidants can help fight free radicals and play a role in protecting DNA, proteins and lipids from oxidative stress.
Sulforaphane is dormant in these vegetables until they are chewed or cut, from there an enzyme called myrosinase is released which kickstarts the sulforaphane. Sulforaphane levels are higher when the vegetables are raw, these levels are lowered when cooked as it reduces the effectiveness of the myrosinase.
Sulforaphane is available in a variety of forms including powders and capsules. Broccoli supplements are taken for those who may not like the taste of the vegetables or prefer to eat them cooked, which then provides lower levels of Sulforaphane.
