Poppy Seed Lemon Cookies:
Ingredients: 2 teaspoons Organic Poppy Seeds, 2⅓ cups all purpose flour, 1tsp baking powder, ½tsp baking soda, ½tsp salt, 1 cup unsalted butter, 1 cup granulated sugar, 1 large egg, zest of 2 lemons, 2 tbsp lemon juice, 2 tsp vanilla extract.
Method: Preheat oven at 350°F/177°C/Gas Mark 4 & line a baking sheet with parchment paper. In a bowl, mix the flour, baking soda, baking powder & salt. Combine the butter and sugar in a mixer until fluffy. Add the egg, lemon zest, lemon juice, vanilla & poppy seeds. Mix on low and slowly add the flour mixture. Once combined, scoop onto the baking sheet and bake for 10-12 minutes. Cool on a wire rack for 5 minutes before serving. Enjoy!
