Blueberry Butterscotch Soufflé Pancakes
Ok some of you may be thinking 'what are soufflé pancakes and why do they sound so fancy?' Soufflé Pancakes are originated from Japan who are famously known for their super high and super fluffy pancakes. Soufflé Pancakes are all about the eggs. The egg whites are beaten until stiff peaks form and then are folded gently into the rest of the batter. As a result, the pancakes are super airy, like soufflé.

Ingredients
- 30g Peak Supps Butterscotch Pea Protein Isolate
- 70g Spelt Flour
- 175ml Almond Milk
- 1 tbsp Lemon Juice
- 1/2 tsp Peak Supps Baking Powder
- 80g Blueberries
- 1 tsp Milled Flax
Method
Combine the dry ingredients and then mix in the wet. Add the blueberries and then pour into tin foil circles in a greased pan. Flip when the bottom is cooked and carefully cut away the foil when finished.

- Smooth Peanut Butter mixed with 1 tsp of maple syrup
