Vanilla and Cinnamon Protein Pancakes Recipe 

We know cooking takes time and normally the longest part is choosing what to cook. So, here's a quick meal with a good amount of carbohydrates, healthy (MCT) fats, protein and super tasty!
Our vanilla and cinnamon protein pancakes are healthy and make the perfect meal any time of the day! So put down your microwave meal which you'll later regret eating and try these pancakes... We promise they only take 10 minutes! 
 
Ingredients

Toppings

  • Manuka Honey
  • Raspberries
 
How to Cook?

  1. Preheat a large flat frying pan onto the medium heat, cover the base of the pan with a tablespoon of coconut oil.
  2. Peel and mash the banana into a small mixing bowl
  3. Add and mix wet ingredients - 2 Egg - 80 ml of milk 
  4. Mix dry ingredients together in a separate large bowl - 2 teaspoons cinnamon - 2 teaspoons baking powder - 20g Peak Supps Vanilla Whey Protein Powder - 40g Peak Supps Instant Oats 
  5. Slowly add the wet ingredients to the dry ingredients whilst continuously whisking (until a smooth consistency)
  6. Pour the mixture into the pan to your preferred size pancakes.
  7. When the pancake starts to bubble flip the pancake over to cook both sides evenly.
  8. Serve the pancake with Manuka Honey and a handful of raspberries. 
 
Note: There are different grades of coconut oil, refined oil tends to lose many of the beneficial compounds that make coconut oil very good for you, always try to buy cold pressed and unrefined coconut oil, as it has more MCT and other beneficial properties. We could go on about the benefits of good quality coconut oil but a quick search on Google will show you pages of how it's good for cognitive function, memory, immune system support, losing weight etc...
 
Manuka honey is also far healthier than regular honey, even though it does generally come with a steeper price tag.
