Healthy Chocolate Chip Banana Bread

Calling all banana bread lovers... this is a recipe you don't want to miss out on! Put those ripe bananas to use with this delicious treat. Even better, this banana bread recipe is made with our Organic Coconut Flour.

Ingredients & Measurements 

  •  3 bananas
  • 110g Peak Supps Organic Coconut Flour
  • 40g Peak Supps Oats
  • 400ml milk of choice
  • 2 eggs
  • 50g dark chocolate
  • 50g peanut butter
  • 1 tbsp sugar-free syrup (or honey)
  • 1 tsp Peak Supps Sodium Bicarbonate
  • 1.5 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1.  Line a loaf tin with baking paper and preheat the oven to 160 degrees (fan). 
  2. In a large mixing bowl, mash your ripe bananas, add the eggs and mix.
  3. Sift the flour and add the rest of the dry ingredients to the bowl and mix until well combined. Then add your milk, peanut butter, syrup/honey, vanilla extract and stir again well.
  4. Chop the dark chocolate into chunks and add half to the mix, leaving the other half for the top. Mix well.
  5. Pour your mixture into your loaf tin and sprinkle the remaining dark chocolate on top.
  6. Place onto a tray and put in the centre of the oven to cook for 45-50 minutes (or until a skewer comes away clean). Tip: If your bread is colouring well on top but still needs more cooking time, put some tin foil on top to avoid it burning.
  7. Aaaaand enjoy! yum.
