No- Bake Tiramisu Cheesecake

Stuck on the feeling of wanting a dessert with simple ingredients but can't find the time?🍰

We've got you covered with our tiramisu cheesecake (which can be enjoyed vegan).

No baking is required, including our very own cacao powder

This is a dessert which you are bound to love and enjoy the process too! ☕️

 

 

What you need:

Biscuit base:
  • 250g of Digestives
  • 95g of Melted butter of choice

Filling:

  •  225ml of Double cream.
  •  300g of Cream cheese spread.
  •  100g of Thick coconut yoghurt (or more creamy spread)
  •  2 1/2 Tbsp of cornstarch.
  •  70ml of Syrup.
  •  1 tsp of Vanilla paste/extract.
Sponge:
    • Store-bought or homemade sponge fingers.
    • 150ml of Brewed espresso.
    • Cacao powder to dust.

    How to make:

    1. Brew your espresso and set it aside to cool.
    2. Blitz or finely crush the digestives and mix in the melted butter.
    3. Add to a 7” tin, flatten down, and refrigerate.
    4. Whisk cream cheese, yoghurt, vanilla, syrup, and cornflour.
    5. Separately, whisk your cream to medium-stiff peaks, then gradually add this to the cream cheese mixture and fold gently.
    6. Add 1/3 of the cream mixture layer.
    7. Dip the sponge in coffee for 1-2 seconds, let excess coffee drip, and add it on top of the cream. Repeat this until the cream is covered with sponge fingers.
    8. Add another 1/3 of cream on top and smooth down.
    9. Use a piping bag to pipe the remaining 1/3 of the cream on top.
    10. Refrigerate for 6 hours or overnight, and finally dust with cacao powder and serve!
