Salted Date Tahini Blondies

In celebration of the upcoming World Baking Day, here's our sweetened spongecake-blondie hybrid, which is the perfect combination of salty and sweet!

 

What you need:
(serves 9-12)

How to make:

  1. First make date paste (heat pitted chopped dates in the milk with baking soda until broken down).
  2. Mash with a fork or blend until smooth. Set aside to cool.
  3. Preheat oven to 165c fan and line 8x8 in a large bowl combine the wet (flax eggs, melted coconut oil, vanilla, date paste, tahini) and then whisk in the sugar.
  4. Add dry ingredients to this (flour, baking soda, baking powder, salt, ground almonds).
  5. Mix until combined.
  6. Transfer to the tin and top with chocolate chips.
  7. Bake for 24-25 minutes until a toothpick inserted comes out almost clean (if you want it fudgier, feel free to underbake slightly).
  8. Let cool slightly and sprinkle flaky sea salt before slicing.
