Salted Date Tahini Blondies

Let us introduce you to our new favourite recipe: Salted Date Tahini Blondie,  the perfect combination of salty and sweet!

What you need:
(serves 9-12)

  • 220ml of milk of choice with 1/2 tsp. baking soda.
  • 150g of Medjool dates.
  • 1 tsp of Vanilla extract.
  • 2 eggs 
  • 90g of Coconut sugar.
  • 90g of Tahini.
  • 4 tbsp (55g) of Melted coconut oil.
  • 160g of Fine oat flour.
  • 25g of Ground almonds.
  • Dark chocolate chips.
  • 3/4 of Baking powder.
  • 1/2 tsp of Baking soda.
  • 3/4 tsp of Salt.

How to make:

  1. First, make the date paste (heat pitted chopped dates in the milk with baking soda until broken down).
  2. Mash with a fork or blend until smooth. Then, set it aside to cool.
  3. Preheat the oven to 165°C and line 8x8 in a large bowl combine the wet ( eggs, melted coconut oil, vanilla, date paste, tahini) and then whisk in the sugar.
  4. Add dry ingredients to this (flour, baking soda, baking powder, salt, ground almonds).
  5. Mix until combined.
  6. Transfer to the tin and top with chocolate chips.
  7. Bake for 24-25 minutes until a toothpick inserted comes out almost clean (if you want it fudgier, feel free to underbake slightly).
  8. Let cool slightly and sprinkle flaky sea salt before slicing.
  9. Enjoy!
